TeX and LaTeX
For editing LaTeX you can use a standard editor (e.g. emacs, vi, gedit) or a GUI such as texmaker or kile. For references there is bibtex and the GUIs kbibtex and mendeleydesktop.

The Ubuntu default LaTeX installation is currently texlive 2015. We use the default texlive search path for our TeX installation, which you can find by typing kpsewhich --expand-var='$TEXINPUTS'
. For a sample user this expands to:
.:{/home/evatest3/.texmf-config, /home/evatest3/.texmf-var, /home/evatest3/texmf, /etc/texmf, !!/var/lib/texmf, !!/usr/local/share/texmf, !!/alt/applic/texmf-ubuntu, !!/usr/share/texmf, !!/usr/share/texlive/texmf-dist}/tex/{kpsewhich,generic,}//
